1. Product Overview
This product is produced via submerged liquid fermentation and purification using a genetically engineered Pichia pastoris strain. With exceptional thermal stability and catalytic efficiency, it withstands high-temperature processing environments and is widely applied in wheat starch-based ethanol production.

2. Mechanism of Action
Xylanase is a multi-enzyme system comprising β-1,4-endoxylanase (EC 3.2.1.8) and β-xylosidase (EC 3.2.1.37), operating synergistically through the following steps:

β-1,4-Endoxylanase: Randomly hydrolyzes internal β-1,4-glycosidic bonds in xylan backbones, depolymerizing long-chain xylan into xylo-oligosaccharides (XOS).

β-Xylosidase: Cleaves non-reducing ends of XOS and xylobiose to release free xylose, achieving complete xylan degradation.

3. Enzyme Activity Definition
One International Unit (IU) is defined as the amount of enzyme required to liberate 1 μmol of reducing sugar (expressed as xylose equivalents) per minute from a 10 mg/mL oat xylan solution under standard assay conditions (50°C, pH 4.8).
