Product Overview: Produced via submerged fermentation of Trichoderma reesei (italicized, species lowercase) and purified using modern back-extraction techniques.  

Applications: Utilized in brewing, sugar processing, and industries requiring β-glucan hydrolysis.  

Unit Definition:  

One β-glucanase unit (U) is defined as the amount of enzyme required to liberate 1 μmol of reducing sugar (expressed as glucose equivalents) per minute under standardized conditions (pH 4.8, 50°C).  

Mechanism of Action:  

β-Glucanase (EC 3.2.1.6) is a collective term for enzymes that hydrolyze β-glycosidic bonds in β-glucans. This includes:  

- Endo-acting types: 1,3-1,4-β-glucanase, 1,3-β-glucanase, 1,4-β-glucanase, and 1,3-1,6-β-glucanase, which cleave internal bonds.  

- Exo-acting types: 1,2-1,4-β-glucanase, which hydrolyze terminal bonds.  

The enzyme degrades high-molecular-weight β-glucans into low-molecular-weight oligosaccharides, reducing viscosity and hydrophilicity.
