Product Overview:Produced via controlled submerged fermentation of Aspergillus niger. This enzyme efficiently hydrolyzes proteins under acidic conditions and is widely applied in alcohol production, distilled spirits, leather processing, feed additives, and food fermentation industries.
Unit Definition: One unit of enzyme activity (U/g or U/mL) is defined as the amount of enzyme required to liberate 1 µg of tyrosine per minute from casein under standardized conditions (pH 3.0, 40 ± 0.2°C).
Mechanism: Acid protease belongs to the aspartic protease family, which specifically cleaves peptide bonds within proteins to generate oligopeptides and free amino acids.
