Product Overview: Produced via controlled submerged fermentation of Bacillus subtilis. Widely applied in leather processing, animal feed, baking, flavor enhancement, brewing, and other industries.

 

Unit Definition: One unit (U/g or U/mL) corresponds to the enzyme quantity required to liberate 1 µg of tyrosine per minute from casein under standardized conditions (pH 7.5, 30 ± 0.2°C).  

 

Mechanism: A hydrolase comprising endopeptidases, aminopeptidases, and carboxypeptidases. These enzymes synergistically hydrolyze peptide bonds within proteins, breaking them down into polypeptides, oligopeptides, and free amino acids under neutral pH conditions.
